The day begins with a morning stroll through Chapultepec Park and the park behind her restaurant, Carmela y Sal, her favorite spot to walk. Here, Gaby finds clarity and connection, especially when she needs to think or relieve stress. “I often go for walks here to think… it’s a space that allows me to reflect and reconnect with my creativity,” she shares.
11:00 AM – Inspiration in Galleries
Next, Gaby heads to Colonia Roma, where she visits art galleries that serve as inspiration for her menus. She observes colors, textures, and compositions, capturing ideas that she later applies to her dishes. “I go to a concert or a gallery, and all of that gives me so much inspiration to create flavors, combinations, and experiences in the kitchen,” she explains.
1:00 PM – Lunch at Her Favorite Restaurant
At noon, it’s time to enjoy the cuisine that inspires her. Gaby returns to Carmela y Sal, her own space that reflects the gastronomy of southeastern Mexico. Beyond being a place to share her creations, the restaurant is also part of the story of her book Cocina Carmela, which combines stories, experiences, and iconic recipes.
3:00 PM – Exploring Local Markets
The afternoon is dedicated to exploring traditional city markets, where Gaby often brings her international friends to experience the richness of Mexican cuisine. “I take my friends to Tepito to try tacos made with liver and miguitas… it’s wonderful how the food in these places can surprise you,” she says.

After the markets, Gaby enjoys a moment to relax at some of her favorite bars, like Bar Brujas or Handshake. These spots remain her choice when she wants inspiration or to spend time with close friends.

Back at home or at the restaurant, the chef spends time planning new menus and experimenting with flavors and presentations. Part of her creativity also comes from her experience with synesthesia, a method that allows her to perceive flavors through sounds—a concept already featured in her book that she hopes to develop in a second volume.
